S and I are spending Thanksgiving with my family this year, and to make sure she accommodates my new husbands likes and dislikes, my mother recently inquired as to what special dishes he’d like prepared. He thought about it for a moment, and after we ran through our usual dishes, he added one to the list — green bean casserole.
One Thanksgiving as a child, I requested it once, after having had it at a friend’s house. After a bit of objecting from my mom, we made the classic Campbell’s version. That was the first, and last time that it was ever made in our house.
So when my husband requested this, my mom and I gave each other that look. You know the look. Now, nothing against the classic Thanksgiving side–it’s not that it’s not tasty–but it’s just a bit too much for us to handle with all the other rich dishes we indulge in.
Nevertheless, we will of course accommodate my wonderful husband, but after volunteering to make this dish myself, I set out to find perhaps an updated, more refined version of the classic recipe. And I found so many wonderful sounding renditions that I just had to share them with you!
